BIOLOGY: Pale Orange in colour, segmented body, 2 claws and large black eyes. Caught over soft muddy sediment, lives in burrows at depths of 230 to 700 metres. Catch is mainly in 350-500 metre depth range. Australian Scampi flesh is opaque white, very delicate with exquisite sweet flavours. Highly regarded in fine dining establishments across the globe.
