BIOLOGY: Light brown or pink (sometimes greenish) with many dark brown or red bands. Brown tiger prawns are endemic to Australian waters. Adult Brown Tiger Prawns are found in depths of 200 metres, however mostly trawled in 20 – 45 metres of water over course sediments. The white flesh has red bands and its delicate, sweet flavour is highly regarded.

WESTERN KING PRAWN

COMMON NAME: King Prawn
SCIENTIFIC NAME: Melicertus latisulcatus

BIOLOGY: Have a cream to light brown body, with legs and tailfin a distinctive bright blue. Available wild-caught, these are marine and estuarine-dwelling Prawns, with adults found offshore on a range of bottoms (rock, sand, mud and gravel) to depths of over 220m, but are mostly trawled in 20 – 45 m of water over course sediments.
Juveniles preferring estuaries or shallow coastal waters. They have a rich flavor and moist flesh.

BIOLOGY: Shark Bay Saucer Scallops have a firm white flesh, processed with roe off as meat or half shell. Distinctive sweet flavour, undoubtedly the worlds sweetest scallop. Saucer Scallop shells are almost round in shape and the top shell is distinctively smooth and flat with concentric reddish-brown, circular bands.

BIOLOGY: The eyes of a Mantis Shrimp are among the most advanced in the animal kingdom, they are aggressive predators with eight pairs of legs and segmented body.
